The lvl 3 vs lvl 5 is doable: simply let the NPC attack the mill first and time it so you recapture it directly.
A harder level is the one where you are in the middle with a lvl 1 against 2 with lvl : try to get all your balloons to a neutral lvl 5 and try to get the far lvl 5 soon. If you time it correctly, the 2 NPC's will be doing some infighting without a clear winner and you can take over.
The 'impossible' level: final one where you have a lvl 1 castle with a lvl 1 tower and mill in range against a lvl 10 castle. He attacks directly and you don't stand a chance production wise (2.5/s against 2.2/s) It would take an upgrade to lvl 4 to even the production, but you barely get time for one upgrade. I only managed to beat this with a bug: try to get all your balloons to the mill, launch them all towards the lvl 10 and keep spamming balloons. If you are lucky, you'll get an invincible group of 15 balloons heading towards his lvl 10 while he crushes you. As they get closer to the castle, you'll start losing some balloons and you just have to get lucky to take it. Immediatly start attacking the castle as he will be upgrading it (if he get's lvl 4 it's over for you)

fun but unfair
I am stuck on the lvl where the player starts with a lvl 3 castle next to a lvl 5 mill next to a lvl 5 enemy. This lvl is impossible!
